A simple cake to make but simply delicious. For preference I use Golden Delicious apples but you can use a tarter apple if you wish.

Serves: 12

  • 5 apples, peeled and cored
  • 3 eggs
  • 1 1/2 cups white sugar
  • 3/4 cup vegetable oil
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla essence
  • 2 cups (250g) plain flour
  • 3/4 cup chopped walnuts

Preparation:20min  ›  Cook:55min  ›  Ready in:1hour15min

  1. Preheat oven to 180 degrees C. Grease and flour a 23x33cm cake tin. Cut the apples into 2.5cm wedges. Set aside.
  2. In a large bowl, whisk together the eggs and sugar until blended. Mix in the oil, baking soda, cinnamon and vanilla. Stir in the flour just until incorporated then fold in the apples and walnuts.
  3. Pour batter into prepared tin and bake for 55 minutes, or until a toothpick inserted into the centre of the cake comes out clean. Allow to cool slightly. Serve warm or at room temperature.

Extremely easy recipe. Next time I will add less sugar (1 cup only) as the cake turned out very sweet. - 05 Feb 2011

This cake was superb! It was super quick and easy to whip up and the finished product was perfect. My only suggestion would to be add a touch more of the chopped walnuts- perhaps 1 cup to 1 1/4 cup- as they make a lovely texture combined with the apple pieces. =) - 10 Aug 2012

Very delish. I didn't have any walnuts so used the same amount of coconut instead. Love the apple and cinnamon combination. - 11 Dec 2011
