Vegetarian Sausages

    Although these are written up as sausages they could just as easily be treated as a burger or patty, either way they have a great flavour and texture.

    Serves: 6 

    • 40g margarine
    • 1 onion, diced
    • 3 leeks, sliced
    • 1 cup fresh breadcrumbs
    • 1 cup finely chopped walnuts
    • 1 teaspoon dried sage
    • 1 1/2 cups rolled oats
    • 1 egg, whisked
    • salt and pepper, to taste
    • 2 tablespoons vegetable oil

    1. Melt the margarine in a frypan over medium low heat. Add the onions and leeks then cook until softened. Stir frequently.
    2. When the leeks and onions are soft, stir in the breadcrumbs, walnuts, sage, oats and egg until well blended. Remove from heat immediately and allow to cool.
    3. Preheat the oven to 200 degrees C. Shape the mixture into 6 large fat sausages. Heat 2 tablespoons of vegetable oil in a large frypan over medium-high heat. Fry the sausages until browned on all sides. Remove them from the frypan, and place them on a baking sheet. Brush the sausages with oil.
    4. Roast the sausages in the oven for 25 minutes or until browned. Serve hot.

    well....this recipe took a long time to make and in the end my 3 kids wouldn't even touch it. I tried it and it just tasted like sauteed leek and i only used one. My advice would be to not make this. Sorry  -  06 Dec 2004  (Review from Allrecipes USA and Canada)


    I liked this recipe! It was easy to make although I made a few changes. I only used one leek and I had to use 3 eggs to make the ingredients stick together.
