Very Banana Banana Bread

    This banana bread is moist and delicious, with loads of banana flavour. Friends and family love my recipe and say it's by far the best. It's wonderful toasted!

    Makes: 1 loaf

    • 2 cups (250g) plain flour
    • 1 teaspoon bicarb soda
    • pinch salt
    • 115g butter
    • 115g brown sugar
    • 2 eggs, beaten
    • 500g mashed overripe bananas

    1. Preheat oven to 180 degrees C. Lightly grease a 13x23cm loaf tin.
    2. In a large bowl, sift together flour, baking soda and salt. In a separate bowl, cream together butter and brown sugar. Stir in eggs and mashed bananas until well blended. Add banana mixture to flour mixture and stir until just moistened.
    3. Pour batter into prepared tin and bake for 60 to 65 minutes, until a toothpick inserted into centre of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out on to a wire rack.

    Altered ingredient amounts. Reduced sugar by a third and added 1 teaspn of vanilla essence. Everyone loved the taste and didnt notice the reduced sugar  -  27 Jan 2011

    my family love this loaf. I cant seem to get my hands on enough ripe bananas fast enough. This is a recipe that as soon as it is made the family are digging into it. Moist loaf with a lovely taste and very easy to make. Especially for a beginner like myself. Smells good cooking too. YUM!  -  25 Feb 2011
