Pork Sausage and Capsicum Casserole

This is an excellent sausage casserole with only a few key ingredients. Serve with brown rice and freshly boiled broccoli.
6 links pork sausage
1 large red capsicum, chopped
1 large orange capsicum, chopped
1 large yellow capsicum, chopped
1 large onion, diced
1/2 cup tomato sauce
3/4 cup (180ml) hot water
salt and pepper to taste
- In a large frypan, brown sausage on medium heat. Remove from heat and cut into thirds.
- In a 2-litre casserole dish, combine the sausages, capsicums, onion, tomato sauce and hot water. Mix together until well combined, and season with salt and ground black pepper.
- Bake at 180 degrees C for 1 hour, stirring every 15 minutes.
