Pork Sausage and Capsicum Casserole

This is an excellent sausage casserole with only a few key ingredients. Serve with brown rice and freshly boiled broccoli.

Serves: 3 

  • 6 links pork sausage
  • 1 large red capsicum, chopped
  • 1 large orange capsicum, chopped
  • 1 large yellow capsicum, chopped
  • 1 large onion, diced
  • 1/2 cup tomato sauce
  • 3/4 cup (180ml) hot water
  • salt and pepper to taste

Preparation:10min  ›  Cook:1hour  ›  Ready in:1hour10min 

  1. In a large frypan, brown sausage on medium heat. Remove from heat and cut into thirds.
  2. In a 2-litre casserole dish, combine the sausages, capsicums, onion, tomato sauce and hot water. Mix together until well combined, and season with salt and ground black pepper.
  3. Bake at 180 degrees C for 1 hour, stirring every 15 minutes.
