Baked Penne

    This recipe was originally for ziti but none of my friends knew what it is, so now I just call it penne which is more or less the same thing. The recipe uses three cheeses layered with pasta and vegetable sauce.

    Serves: 8 

    • 1 packet (450g) penne, ziti style if available
    • 700g ricotta cheese
    • 550g grated mozzarella cheese
    • 1 egg, whisked
    • 1kg jar vegetable pasta sauce
    • 1/4 cup grated Parmesan cheese

    Preparation:15min  ›  Cook:30min  ›  Extra time:15min resting  ›  Ready in:1hour 

    1. Bring a large saucepan of lightly salted water to a boil. Add ziti and cook for 8 to 10 minutes or until al dente; drain and rinse.
    2. In a medium bowl, mix penne, ricotta cheese, mozzarella cheese, egg and 1 1/2 cups vegetable pasta sauce.
    3. Preheat oven to 180 degrees C. Lightly grease a 23cmx30 baking dish
    4. Spoon penne mixture into baking dish. Top with remaining vegetable pasta sauce, followed by Parmesan cheese.
    5. Bake in preheated oven for 30 minutes; let stand for 15 minutes before serving.

    Made it healthier. I used low fat dairy products and it turned out fine. I think this would be nice with canned fish if you wanted some extra protien  -  25 May 2009

    Not bad, didn't have enough ricotta so added some creme fraiche, still tasty  -  17 Apr 2011
