Easy Creamy Asparagus Soup

    Lovely creamy asparagus soup that is quick and easy to make. Serve it with grated parmesan cheese and fresh crusty bread.

    Serves: 4 

    • 500g fresh asparagus
    • 1 onion, diced
    • 1 cups vegetable stock
    • salt and pepper, to taste
    • 1 cup milk
    • 1/2 cup sour cream
    • 1/4 cup grated Parmesan cheese, to serve

    Preparation:15min  ›  Cook:20min  ›  Ready in:35min 

    1. Place asparagus and onion in a saucepan with the vegetable stock, simmer until the vegetables are tender. Add the milk then use an imersion blender to create a smooth soup.
    2. Stir in the sour cream, season to taste with salt and pepper then serve with cheese to garnish.

    This starter soup also makes a great wintry meal for two! I sauteed the onion with a few cloves of minced garlic before adding the asparagus and stock to the pot. You can even skip the parmesan and serve with slices of grilled cheesy-toast for dipping. Super-yum!  -  27 May 2014
