Irish Mashed Potato Cake

    Mashed potatoes are the secret ingredient in this walnut raising cake. It is spiced with cinnamon, cloves and nutmeg.

    Serves: 12 

    • 150g butter
    • 2 cups white sugar
    • 2 eggs
    • 3/4 cup milk
    • 2 cups plain flour
    • 2 teaspoons baking powder
    • 1/8 teaspoon salt
    • 2 teaspoons ground cinnamon
    • 2 teaspoons ground cloves
    • 2 teaspoons ground nutmeg
    • 2 cups cooked, mashed potatoes
    • 1 cup chopped walnuts
    • 1 cup raisins

    1. Preheat oven to 160 degrees C. Grease and flour a 25cm ring tin.
    2. Sift together the flour, baking powder, salt, cinnamon, cloves and nutmeg. Set aside.
    3. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time. Add the flour mixture alternately with the potatoes and milk. Stir in nuts and raisins.
    4. Pour into the prepared ring tin. Bake in the preheated oven for 90 to 120 minutes, or until a fine skewer inserted into the cake comes out clean.

    I made this for a St. Patricks day family party. Everyone loved it. They all want the recipe (which i may keep to myself) and they said this I will have to bring each time we get together.
