    This is a really simple and easy dish to prepare, but it has maximum flavour. You won't be able to resist going back for more. Serve with crusty bread or garlic bread.

    Ingredients
    Serves: 4 

    • 1 red capsicum thinly sliced
    • 1 green capsicum thinly sliced
    • 6 medium mushrooms sliced
    • 1 large zucchini halved lengthways and sliced
    • 1 small bunch of broccoli cut into florets
    • 1 onion thinly sliced
    • 3 tomatoes cut into chunks
    • 30g green beans
    • 1 jar (500g) of good tomato pasta sauce or passata
    • 1½ cups of long grain rice
    • 3 cups of boiling water
    • 400g can of mixed beans in water drained
    • 3-5 tbls of parmesan cheese depending on personal taste
    • 50g of mature cheddar cheese

    Directions

    1. Pre-heat oven to 200 degrees C.
    2. Place the water, rice and pasta sauce into a large heavy saucepan, and simmer for 10 mins. Add all the prepared vegetables apart from the tomatoes and beans and simmer for another 10 mins. Now add the tomatoes and mixed beans and simmer for another 5 minutes.
    3. At this point test the rice, it should now be tender, if not just add a little more water if necessary and simmer for a little longer till tender. Lastly, add the parmesan cheese and stir in thoroughly.
    4. Place the mixture in a large oven dish and top with the cheddar cheese and bake for 15- 20 minutes until golden brown.
