Fast Apple and Rhubarb Pie

    This is as its name suggests a fast apple and rhubarb pie recipe. It is simple but so delicious! Serve warm with cream or a scoop of vanilla ice cream.

    Serves: 8 

    • 6 apples, peeled, cored and diced
    • 3 sticks rhubarb, diced
    • 1 cup (200g) white sugar
    • 2 teaspoons ground cinnamon
    • 1, 23cm prepared pastry pie shell

    Preparation:20min  ›  Cook:40min  ›  Ready in:1hour 

    1. Preheat oven to 220 degrees C.
    2. Combine the apples and rhubarb in a large bowl. Mix together sugar and cinnamon in a small bowl then sprinkle over fruit.
    3. Toss until fruit is thoroughly coated then spoon the mixture into the pastry shell.
    4. Bake in preheated oven for 40 minutes.

    Used different ingredients. I used a combination of brown, white & castor sugar and desicated coconut instead of plain sugar. I also used puff pastry  -  16 Aug 2010


    First pie i've ever made. Easy. i love rhubarb and will definitely make it again, but maybe not with puff pastry next time - i had to cover it with foil to stop it burning but it turned out great!  -  16 Aug 2010


    We like this but I felt I didn't put enough apple and rhubarb in the dish I thought it would over flow but it actually sinks a bit. I used bought short crust pastry normally I would make my own but ran out of time. Still everyone enjoyed.  -  30 Sep 2015
