Balsamic and Olive Oil Dressing

    Using fresh herbs is a great way to add some extra flavour to your basic balsamic vinegar and olive oil salad dressing as shown in this recipe.

    Serves: 6 

    • 1 sprig fresh oregano
    • 1 sprig fresh thyme
    • 1 cup (250ml) olive oil
    • 1/4 cup tablespoons balsamic vinegar
    • salt and pepper, to taste

    1. In a medium glass mixing bowl combine the oregano, thyme, oil, vinegar, salt and pepper. Mix together and pour mixture into a bottle, using a funnel to keep yourself from losing oil. Cover tightly and store at room temperature.

    This dressing was very good. I added more of the balsamic vinager and less oil, since I prefer a more vinager taste than oil, and added a little more of the spices than called for, but I was quite happy with the results.  -  24 Nov 2002  (Review from Allrecipes USA and Canada)
