The best part of jacket potatoes is the crunchy skin which you won't get with this recipe. Only way would be to carefully grill the empty skins before you put the filling back. - 10 Jul 2011
I actually used some new potatoes for this as an appetizer for a party. I added some salt and pepper along with some sour cream for flavor. I also rubbed just a bit of oil on the skins so they'd crisp up a little. Customizable for what you have on hand (different cheeses, adding bacon, etc.) and my guests loved them. Tasty! - 07 May 2013
