Raspberry Oat Slice

    This is the easiest slice to make and it is even better if you have homemade raspberry jam to use. Great for picnics, lunch boxes, school fetes and anytime really.

    Serves: 12 

    • 1/2 cup (90g) light brown soft sugar
    • 1 cup (125g) plain flour
    • 1/4 teaspoon bicarb soda
    • pinch of salt
    • 1 1/3 cups (125g) rolled oats
    • 125g butter, softened
    • 3/4 cup (250g) raspberry jam

    Preparation:20min  ›  Cook:40min  ›  Ready in:1hour 

    1. Preheat oven to 180 degrees C. Grease one 20cm square cake tin or slice tin, and line with baking paper.
    2. Combine brown sugar, flour, bicarb soda, salt and oats in a large bowl. Rub in the butter using your hands to form a crumbly mixture.
    3. Press 3/4 of the mixture into the bottom of the prepared cake pan, reserving the rest for the topping. Spread the jam over the base but not quite to the edges as it will spread.
    4. Sprinkle the remaining crumb mixture over the top and lightly press it into the jam.
    5. Bake in preheated oven for 35-40 minutes or until lightly browned. Allow to cool before cutting into bars.

    Love this slice. Very easy to prepare.I received many compliments when I took it to work.Could make it with any jam.I warmed jam in microwave to maker it easier spreading.This will be a family regular for sure!  -  04 Feb 2011
