These are delicious little raisin biscuits called 'bakestones' in Wales. They are fried on a griddle rather than baked.


Serves: 72 

  • 2 cups (250g) caster sugar
  • 275g butter
  • 1 teaspoon salt
  • 1 1/2 teaspoons baking powder
  • 2 eggs
  • 4 cups (500g) plain flour
  • 175g raisins

Preparation:10min  ›  Cook:8min  ›  Ready in:18min 

  1. Preheat a griddle to moderate heat. Grease lightly.
  2. Beat sugar and butter together, adding salt and baking powder. Beat in eggs. Add 2 cups flour and raisins and mix. Then add remaining flour. If too dry add a little milk; if too wet add a little flour.
  3. Roll out about 5mm thick and cut out biscuits.
  4. Place on a greased griddle and brown on both sides.
