They are very, very easy to make and fabulously delicious. The lemon filling is like a gooey lemon curd.

Ingredients

For the base:
220g (1¾ cups) plain flour
90g (½ cup) icing sugar
185g butter, softened
For the lemon filling:
3 eggs
345g (2 cups) caster sugar
2 tablespoons plain flour
3 tablespoons lemon juice
4 tablespoons icing sugar for decoration

Preparation method

1. Preheat the oven to 190 C. Grease a 20-23cmx30cm x 5cm deep baking pan.
2. Combine the base ingredients and pat dough into prepared pan.
3. Bake in the preheated oven for 20 minutes until slightly golden.
4. While the crust is baking, whisk together eggs, caster sugar, flour and lemon juice until frothy. Pour this lemon mixture over the hot base.
5. Return to the preheated oven for an additional 20 to 25 minutes, or until light golden brown. Cool on a wire rack. Dust the top with icing sugar and cut into squares.

    Tweak: Diane Lynn Altered ingredient amounts:

    DOUBLE the ingredients for the base. And for the rest of the recipe, decrease temp to 180 degrees. With these changes to the recipe, you will get delicious lemon squares!

    Tweak: BELLBUNCH Something else:

    These lemon squares were VERY good. I had some trouble with them though. I have NO idea how you all spread this dough to fit such a large tin. It was too sticky so I put it in a smaller one and cooked it for the same amount of time and it came out fine. I also had trouble cutting them. The bottom was very hard. I'll definitely make these again.

    These were good, however, next time I make them, I will only bake for 20 minutes-after 25, they were a little crunchy (but still really tasty!)
