Gooey Lemon Squares

    These lemon squares are so gooey they are almost like lemon curd. Easy to make and wonderfully delicious.

    Serves: 36 

    • For the base
    • 1 3/4 cups (220g) plain flour
    • 1/2 cup (90g) icing sugar
    • 185g butter, softened
    • For the lemon filling
    • 3 eggs
    • 2 cups (350g) caster sugar
    • 2 tablespoons plain flour
    • 3 tablespoons lemon juice
    • 4 tablespoons icing sugar for decoration

    Preparation:15min  ›  Cook:45min  ›  Ready in:1hour 

    1. Preheat the oven to 190 degrees C. Grease a 20cm x 30cm x 5cm deep baking pan.
    2. Combine the base ingredients and pat dough into prepared pan.
    3. Bake in the preheated oven for 20 minutes until slightly golden.
    4. While the crust is baking, whisk together eggs, caster sugar, flour and lemon juice until frothy. Pour this lemon mixture over the hot base.
    5. Return to the preheated oven for an additional 20 to 25 minutes, or until light golden brown. Cool on a wire rack. Dust the top with icing sugar and cut into squares.

    Altered ingredient amounts. DOUBLE the ingredients for the base. And for the rest of the recipe, decrease temp to 180 degrees. With these changes to the recipe, you will get delicious lemon squares!  -  21 Jul 2008


    This is an excellent recipe that the whole family loved. It wasn't too lemony and has a nice mix of sweet. Suggestions: don't soften the butter too much or the dough becomes quite soft, don't use their container use something smaller a simple slice dish and wait a few hours before cutting as it is difficult to cut because of the liquid. After you eat it it is fabulous!!!!!  -  04 Jun 2012


    I have made this so many times I've lost count. I'd say that you need to use a little less lemon juice and that's why it's runny... It does set when cooled... I always use baking paper as it gets stuck in the pan to lift it out.... My fav recipe!!!!  -  16 Jul 2011
