These lemon squares are so gooey they are almost like lemon curd. Easy to make and wonderfully delicious.

This is an excellent recipe that the whole family loved. It wasn't too lemony and has a nice mix of sweet. Suggestions: don't soften the butter too much or the dough becomes quite soft, don't use their container use something smaller a simple slice dish and wait a few hours before cutting as it is difficult to cut because of the liquid. I have made this so many times I've lost count. I'd say that you need to use a little less lemon juice and that's why it's runny... It does set when cooled... I always use baking paper as it gets stuck in the pan to lift it out.... My fav recipe!!!! - 16 Jul 2011
