No Bake Coconut Date Balls

    This is a great snack for holiday gatherings. They also freeze well so I tend to make a lot when I make them.

    Serves: 12 

    • 2 tablespoons butter
    • 275g dates, pitted and chopped
    • 3/4 cup (125g) icing sugar
    • 2 eggs, beaten
    • 1/4 teaspoon salt
    • 3 cups (75g) rice bubbles
    • 50g chopped walnuts
    • 1 teaspoon vanilla essence
    • 150g flaked coconut

    Preparation:5min  ›  Cook:20min  ›  Ready in:25min 

    1. Using a double boiler, heat butter, chopped dates, icing sugar, eggs and salt. Stir constantly until very thick, about 20 minutes. Remove from heat and cool.
    2. Add rice bubbles, chopped walnuts and vanilla. Mix well and form into small balls. Roll in coconut. Keep refrigerated.
