Chicken Caesar Salad with Bacon

This is a light dinner salad recipe that is perfect for summer and extra flavourful with the addition of bacon.

Serves: 8 

  • 250g bacon rashers
  • 1 tablespoon olive oil
  • 4 chicken breast, cut into strips
  • 1 cos lettuce, rinsed and sliced
  • 2 handfuls croutons
  • 1/2 cup Caesar salad dressing
  • 1/3 cup grated Parmesan cheese

Preparation:15min  ›  Cook:30min  ›  Ready in:45min 

  1. Cook the bacon until browned the when cooled cut into pieces when cool.
  2. Wipe out the frypan then add the oil and chicken strips cooking until they are golden brown. Remove from the frypan and drain on paper towels.
  3. In a salad bowl, combine the lettuce, croutons, salad dressing, Parmesan cheese and bacon. Top with the sliced chicken and serve.
