Braised Garlic Chicken

This can be easily done in a slow cooker but I prefer in an oven. Serve the braised garlic chicken with pasta and salad or fresh vegetables.

Serves: 4 

  • 12 bulbs garlic, cloves separated and peeled
  • 8 chicken thighs
  • 1 tablespoon oil
  • 1/2 cup white wine
  • 2 (400g) tins crushed tomatoes
  • 1 tablespoon chopped fresh thyme
  • 1/2 (500g) packet spinach tagliatelle pasta

Preparation:15min  ›  Cook:1hour  ›  Ready in:1hour15min 

  1. Peel the garlic and crush to release juices. In a large frying pan brown the chicken in the oil.
  2. Place the cooked chicken and garlic along with the wine, tomatoes and thyme in in a casserole dish.
  3. Cook in an oven at 180 degrees C for 45 minutes or until the meat falls off the bone.

Altered ingredient amounts. We halved the amount of chicken in the recipe, but being garlic lovers, kept that as is. The chicken and tomato sauce turned out deliciously, but the garlic barely cooked through at all. Next time we plan to pre-cook the garlic a bit, not counting on the garlic to cook enough at a very low temp for 45 minutes. Also might want to increase the amount of pasta and tomato sauce relative to the number of breasts you cook. - 18 Jul 2008
