Chocolate Date and Walnut Cake

    I like chocolate cakes and I like date cakes so I combined them and this was the result! It's now a family favourite.

    Serves: 24 

    • 275g dates, pitted and chopped
    • 1 cup (250ml) boiling water
    • 2 cups (250ml) plain flour
    • 1 teaspoon bicarb soda
    • 1/4 teaspoon salt
    • 3 teaspoons cocoa powder
    • 125g butter
    • 200g caster sugar
    • 2 eggs
    • 50g chopped walnuts
    • 175g chocolate chips

    1. Preheat the oven to 180 degrees C. Grease and flour a 23 x 33cm baking tin.
    2. In a small bowl, pour boiling water over dates and set aside to cool.
    3. In a medium bowl, mix flour, bicarb soda, salt and cocoa. Set aside.
    4. Cream butter and sugar until light and fluffy. Add eggs. Add flour mixture alternating with cooled date mixture. Fold in chopped nuts and 1/2 of the chocolate chips.
    5. Pour mixture into prepared baking tin and spread evenly. Sprinkle remaining 1/2 of the chocolate chips over top.
    6. Bake for 45 to 60 minutes, or until a knife inserted into middle of cake comes out clean.

    This cake is yummy. Watch carefully after 40 minutes so it doesn't burn. The children don't care for it, but that's OK, that much more for me!  -  18 Jul 2008
