A lovely light supper, dinner party starter or weekend lunch for you black pudding lovers out there!


Serves: 4 

  • 2 tablespoons olive oil
  • 250g cubed smoked bacon
  • 100g black pudding, sliced and cubed
  • 50g walnut halves
  • 200g fresh mozzarella, torn into pieces
  • 100g rocket
  • 2 tablespoons French dressing
  • fresh dill

Preparation:10min  ›  Cook:5min  ›  Ready in:15min 

  1. Heat olive oil in a heavy based frying pan.
  2. Fry the cubes of smoked bacon along with cubes of black pudding and walnut halves. Cook until bacon cubes are crispy.
  3. Divide rocket leaves evenly on 4 plates. Top with even amounts of the bacon and black pudding mixture.
  4. Place mozzarella cheese on top and drizzle over the dressing.
  5. Garnish with fresh dill.
