Creamy Coconut Rice

    This simple rice is the perfect side dish for an Indian curry. The coconut cream adds a delicious richness to plain old rice. You can find pandan leaf in Asian markets, it adds a distinctive aroma.

    Serves: 6 

    • 400g long grain rice
    • 1 pandan leaf (optional)
    • 1/4 teaspoon salt, or to taste
    • 185ml coconut cream

    1. Wash rice and cover with about 1 litre of water. Set aside for 30 minutes to soak, then drain.
    2. Bring about 750ml water to the boil. Add rice, pandan leaf tied in a knot and salt to taste. Reduce heat and cook, covered, until rice is just cooked (about 12 minutes).
    3. Remove rice from heat and add coconut cream. Stir gently. Cover and set aside until rice absorbs the cream. Discard pandan leaf and serve.
