Potato and Tomato Curry

    A lovely tomato- based potato curry with just a bit of spice. You can make your own spice paste but store bought is easier I think!

    Serves: 4 

    • 1 tablespoons ghee or butter
    • 1 medium sized red onion
    • 3 tablespoons of Indian curry paste-your choice
    • 680g new potatoes
    • 1 tin (400g) chopped tomatoes
    • 300ml boiling water
    • salt and black pepper

    1. Chop the onion and dice the potatoes. Cook the onions in the ghee in a large frying pan on a medium heat until soft. Add the curry paste.
    2. Add potatoes, stir until totally mixed, then add water and cook until the potatoes are very tender - around 1 hr 45mins - stirring every 15 minutes.
    3. Add salt and pepper to taste, then serve.
