    Hearty all-in-one family recipe.

    Serves: 4 

    • 375g cooked potatoes. sliced
    • 2 hard boiled eggs, sliced
    • 150g bacon rashers, chopped and fried
    • 1 onion. sliced and lightly fried
    • 30g butter
    • 30g plain flour
    • 150ml milk
    • 1 beef stock cube in 300 ml hot water
    • 185g grated cheese,. Cheddar or tasty
    • salt and pepper to taste
    • 60g breadcrumbs

    1. Preheat oven to 200 degrees C. Arrange potatoes, eggs, onion and bacon in layers in an oven-proof dish, finish with a layer of potatoes.
    2. Melt butter in a frypan, add flour and cook for one minute then remove from heat. Stir in the milk and beef stock gradually, till there are no lumps. Return to boil stirring all the time, then cook for one minute. Remove from heat
    3. Stir in the seasoning and ¾ of the cheese. Stir well. Pour sauce over ingredients in casserole.
    4. Mix the remaining cheese and breadcrumbs and sprinkle over the top.
    5. Bake in preheated oven for 25-30 minutes.
