Flava Flavs' curry sauce

    I have been making variations of this tomato based sauce for years. It is nice and spicy and very simple to make. This sauce can be used for almost any meat or vegetable curry.

    Serves: 4 

    • 1 large onion
    • 1 tablespoon finely chopped garlic
    • 1 tablespoon finely chopped ginger
    • 1 tsp cumin
    • 1 tsp ground coriander
    • 1 tsp fenugreek powder
    • 2 tsp turmeric
    • 2 tsp garam masala
    • 1 tsp chilli powder
    • 4 black cardamom pods
    • 1 tsp stock powder or one stock cube
    • 4 bay leaves
    • 500g passata or 1 tin (440g) chopped tomatoes blended
    • 2 tbsp Greek or natural yoghurt
    • oil for frying

    1. Finely chop onions and fry on low-medium heat until tender. Then stir in the spices and the garlic and ginger.
    2. Add tomatoes, bay leaves and the stock powder or cube. Stir and simmer for about 5 mins.
    3. Stir in Greek yoghurt and simmer for a further 10 mins.
