Fluffy British pancakes

    Fluffy, fall-apart-in-your-mouth goodness. Keep the finished pancakes in the oven on low while you finish cooking the rest. Spread with butter and serve with real maple syrup.

    Serves: 4 

    • 250g flour
    • 1 rounded tablespoon baking soda
    • 6 large eggs, separated
    • 300ml milk
    • 2 tablespoons melted butter

    1. Mix together flour and baking soda. Drop in egg yolks and mix in while adding milk. Mix til smooth.
    2. Let mixture sit for between 30-60 minutes.
    3. Beat egg whites with an electric mixer til stiff.
    4. Melt butter
    5. Add a spoonful of egg whites to the yolk/flour batter and stir gently.Add the butter in a thin stream, still stirring. Gently fold in the remaining egg whites mixing until just combined,
    6. Heat a non-stick frypan or swipe a butter-soaked paper towel over a normal frypan.
    7. Drop the desired sized portions in the pan. Turn when little air bubbles burst on the uncooked side-just a few minutes.
    8. Cook for about 5 seconds on the other side-DONT press with the spatula...this will keep them from rising.

    Bit too eggy. Could have done with one/two less eggs. Nice and fluffy. May be better with sugar and lemon as a topping as there is no sugar in the recipe.  -  18 Oct 2009

    Lovely! I find it hard to make little pancakes properly! These turned out perfect. Maybe i have a sweet tooth as i had to add a little extra sugar! But loved them. Try them with nutmeg too!  -  28 Oct 2011  (Review from Allrecipes UK & Ireland)
