Microwave Golden Syrup Pudding

Classic and nostalgic, this pudding recipe is delicious and the microwave makes it super easy to prepare.
2 tablespoons golden syrup
90g plain flour
2 1/2 teaspoons baking powder
2 large eggs
125g caster sugar
125g butter, softened

In a 1-litre microwave safe mixing bowl, add the golden syrup, turning to coat the bottom and sides of the bowl.
In a separate bowl place the remaining ingredients and beat well for 2 to 3 minutes. Spoon the mixture on top of the syrup and spread evenly.
Cover loosely with plastic wrap and cook in the microwave on high for 5 to 6 minutes. Remove and let stand for 5 minutes.
Turn out onto a warmed plate and serve hot with hot custard and/or extra syrup.

i just mixed it all up together too.Also i estimated ingredients.yum

So simple. I placed all the ingredients into a bowl and mixed with a wooden spoon. Quick easy comfort food...

Nice, quick, and easy. I accidentally melted the butter while trying to soften it, but it worked fine anyway. I made hot custard while the pudding was cooking and they were ready at the same time. Very nice combination. Kids loved the "cake", but weren't as keen on the golden syrup "jam" but that meant I got to have the extra :-)
