Lemon, Apricot and Poppy Seed Biscuits

    This recipe allows you to adjust to your own tastes, and the lemon kick makes these biscuits unique and perfect for summer.

    Serves: 15 

    • 170g plain flour
    • 1/2 teaspoon baking powder
    • 1/2 teaspoon bicarb soda
    • 70g butter, softened
    • 65g caster sugar
    • 60g chopped dried apricots
    • 50g lemon curd
    • 1 tablespoon poppy seeds

    1. Preheat oven 200 degrees C. Lightly grease a baking tray.
    2. Sift the flour, baking powder and bicarb into a bowl. Add the butter and rub the mixture with your finger tips until the mixture resembles breadcrumbs.
    3. Mix in the chopped apricots, sugar, lemon curd and eggs until the mixture resembles soft dough.
    4. Make small balls about 2.5 cm wide and spread evenly on the baking sheet, leaving space so they can spread, and then press the tops to flatten slightly.
    5. Bake for 12-15 min, until they look golden. Remove from the tray and leave to cool on a wire rack and then repeat in batches until all of the dough is used up.

    Ummm ... Slight problem ... Point 3 says to 'Mix in the chopped apricots, sugar, lemon curd and eggs' ... Except there are no eggs in the Ingredients ... so doesn't tell me how many eggs. (A not so easy recipe when not sure how many eggs to put in)  -  26 May 2009


    Like the others, would love to know how many eggs? i should say two at the most. Or maybe just the one? Oh dear. :-(  -  06 Jul 2012
