Chocolate Brownie Cake with Fudge Icing

    Gooey yet chunky, and the ultimate of all chocolate recipes, so simple to cook but won't last long as once you've had one slice, you've got to have another!

    Serves: 10 

    • 140g milk chocolate
    • 140g dark chocolate
    • 115g butter
    • 100g brown sugar
    • 50g white sugar
    • 2 medium eggs
    • 2 teaspoons vanilla essence
    • 70g plain flour
    • 115g walnuts
    • 100g white or milk chocolate, in chunks
    • Fudge Icing
    • 170g dark chocolate
    • 55g butter
    • 30ml golden syrup
    • 2 teaspoons vanilla essence
    • 1 teaspoon coffee essence

    Preparation:10min  ›  Cook:20min  ›  Ready in:30min 

    1. Preheat oven to 180 degrees C. Grease a 20cm square cake tin.
    2. In a saucepan on a low heat, melt the milk and dark chocolate with the butter till smooth. Remove from heat, stir in the sugars until dissolved. Beat in eggs and vanilla, then add the flour, walnuts and the rest of the chocolate. Mix well.
    3. Put the mixture into the cake tin and cook for 20-25 minuntes. Remove to cool for 30 minutes, if adding the fudge icing. If not the brownies are great warm!
    4. Fudge Icing: Melt the chocolate, butter, golden syrup, vanilla and coffee essence in a saucepan. Once melted put in fridge to cool, until it's thick and can be spread over the brownies.

    this was the most easy recipe for a totally delicious chocolate overload....I used the supermarket basic choc range as did not want to waste money if not turn out well but wow worked fine.     I made just the icing in this recipe as i wanted to coat some brownies i had made, this is so easy to make and tastes absolutely delicious! if it becomes to thick to spread after being in the fridge just microwave for a few seconds and it will spread - its a fabulous recipe i love it!  -  02 Feb 2013  (Review from Allrecipes UK & Ireland)
