Vegan Tahini Shortbread Cookies

    Made with a rich tahini dough and rolled in sesame seeds, these 5-ingredient vegan shortbread cookies are chilled overnight before baking.

    • 1 1/2 cups vegan margarine
    • 1 3/4 cups unbleached plain flour
    • 3/4 cup icing sugar
    • 1 cup tahini
    • 1/2 cup sesame seeds

    1. Blend margarine, flour, sugar, and tahini together in a food processor. Shape dough into 2 logs 2.5cm in diameter.
    2. Place sesame seeds in a dish. Roll each log in sesame seeds. Wrap logs in plastic wrap; chill dough in the refrigerator, 8 hours to overnight.
    3. Preheat the oven to 150 degrees C. Grease 2 baking trays.
    4. Cut dough into 0.5-cm-thick slices. Place on the prepared baking trays.
    5. Bake in the preheated oven until golden brown, 12 to 15 minutes.
