Sesame Shrimp Stir-Fry

    Shrimp are marinated in ginger, pepper, garlic, and sesame seeds and then stir-fried with capsicums and scallions in this quick stir-fry.

    • 450g uncooked medium shrimp, peeled and deveined
    • 1 tablespoon sesame seeds
    • 1 clove garlic, minced
    • 1/4 teaspoon ground ginger
    • 1/4 teaspoon cayenne pepper
    • 1/4 teaspoon ground black pepper
    • 2 tablespoons sesame oil
    • 1 red capsicum, sliced into thin strips
    • 3 green onions, sliced
    • 1/2 pound sugar snap peas
    • 3 tablespoons teriyaki sauce
    • 3/4 cup chicken broth
    • 2 tablespoons cornflour
    • 1/4 teaspoon salt

    1. Combine shrimp, sesame seeds, garlic, ginger, cayenne pepper, and black pepper in a large resealable plastic bag. Marinate in the refrigerator for about 30 minutes.
    2. Heat sesame oil in a large wok or skillet over medium-high heat. Add red capsicum and green onions and stir-fry until slightly softened, 3 to 4 minutes. Add shrimp with marinade, sugar snap peas, and teriyaki sauce and stir-fry until shrimp are opaque, about 4 minutes.
    3. Stir chicken broth and cornflour together in a bowl until smooth. Pour into the skillet. Cook, stirring constantly, until mixture boils. Season with salt.
