Sausage Breakfast Pizza

    This sausage breakfast pizza tops mini prepared pizza bases with breakfast favourites: homemade sausage, scrambled eggs and cheese.

    • 1 (300g) package mini 16cm baked pizza crusts
    • 1/4 cup pork sausage
    • 30g butter, divided
    • 1 tablespoon plain flour
    • 1/4 cup full cream milk
    • 1/2 teaspoon ground black pepper
    • 1/4 teaspoon salt
    • 1/8 teaspoon onion powder
    • 3 large eggs
    • 1/4 cup shredded Swiss cheese
    • 1/4 cup shredded Cheddar cheese

    1. Preheat oven to 200 degrees C.
    2. Place pizza crusts on a baking tray.
    3. Bake in the preheated oven until lightly browned, about 5 minutes. Remove from oven and leave oven on.
    4. Heat a large frying pan over medium-high heat. Cook and stir sausage until browned, 5 to 7 minutes. Remove sausage with a slotted spoon; drain on a paper towel-lined plate.
    5. Reduce heat of pan to medium-low. Melt half the butter in the pan. Add flour; stir until dissolved to make a roux, about 1 minute. Add milk; stir to remove browned bits from bottom of the pan. Cook and stir until thick, about 2 minutes. Season sauce with pepper, salt and onion powder.
    6. Return the drained sausage to the pan; stir to coat with the sauce. Remove from heat; divide sausage and sauce evenly over the pizza crusts.
    7. Melt the remaining butter in a small nonstick saucepan over low heat. Pour in eggs; cook and stir until scrambled, 3 to 4 minutes. Remove from heat; divide scrambled eggs evenly over the pizzas. Top with Swiss cheese and Cheddar cheese.
    8. Bake in the hot oven until cheese is melted, 3 to 4 minutes.
