Baked Prawns with Tomatoes and Green Chilli

    Shrimp scampi gets a twist with diced tomatoes and green chiles in this easy recipe. Parsley and parmesan cheese make for a simple garnish.

    Ingredients
    Serves: 6 

    • 15g butter
    • 450g raw prawns, peeled, deveined and tails removed
    • 1 (400g) can diced tomatoes with green chilli, drained
    • 1 tablespoon lemon juice
    • 1 tablespoon crushed garlic
    • 1 cup plain dry breadcrumbs
    • 2 teaspoons dried parsley
    • 1/4 cup grated Parmesan cheese

    1. Preheat oven to 190 degrees C.
    2. Warm butter in a pan over medium-high heat, tilting the pan so the butter coats the bottom. Add prawn to the pan. Cook prawn until they are bright pink on the outside and the meat is opaque, 4 to 5 minutes.
    3. Mix prawn, tomatoes, lemon juice and garlic in a 25cm baking pan.
    4. Bake in the preheated oven until tomatoes release their juices, about 45 minutes. Stir in breadcrumbs and parsley. Sprinkle Parmesan cheese evenly over the top of the prawns.
    5. Continue baking until juices have been soaked up and the Parmesan cheese has started to melt, about 15 minutes.
