Satay Prawn and Asian Greens Stir-fry

    This Asian-inspired satay prawn and Asian greens stir-fry is the perfect recipe to make when trying to impress dinner guests with little effort.

    Serves: 4 

    • 2 tablespoons peanut oil
    • 1 brown onion, chopped finely
    • 2 garlic cloves, crushed
    • 1 long red fresh chilli, finely chopped
    • 2 teaspoons curry powder
    • 2 tablespoons peanut butter
    • 2 tablespoons lime juice
    • 2 tablespoons oyster sauce
    • 1 (270ml) can coconut milk
    • 800g peeled green prawns, deveined, tails intact
    • 1 bunch choy sum, chopped
    • 150g snow peas, halved
    • steamed jasmine rice, to serve

    1. Heat a wok over medium-high heat. Add half the oil and heat for 20 seconds. Stir-fry onion, garlic and chilli for 2-3 minutes or until onion softens.
    2. Add curry powder and stir-fry for 1 minute or until fragrant. Add peanut butter, lime juice, oyster sauce and coconut milk and simmer, uncovered, for 2-3 minutes or until sauce thickens slightly
    3. Add prawns and simmer, uncovered, for 2-3 minutes or until prawns are just cooked through. Add choy sum and snow peas and stir-fry for 1 minute or until choy sum wilts. Serve stir-fry on rice.
