Rice Porridge with Sultanas

    This creamy rice porridge with sweet, plump sultanas, is the perfect way to start the day with a filling, delicious and gluten free breakfast. It can also be served as dessert with a dollop of thick cream.

    Serves: 4 

    • 1/2 cup arborio rice
    • 1/2 cup water
    • 2 3/4 cups milk
    • 1 vanilla bean, split and scraped
    • 1 tablespoon brown sugar
    • 1/2 cup sultanas

    1. Combine rice and water in small saucepan; bring to a boil. Reduce heat and simmer, uncovered, until liquid is absorbed, about 5 minutes.
    2. Add 2 cups (500ml) of the milk, vanilla bean and seeds, sugar and sultanas; simmer about 20 minutes or until rice is tender, stirring occasionally. Serve warm with remaining milk.
