Spaghetti with Creamy Bacon and Pea Sauce

    This delicious winter warmer combines peas, bacon, pasta and a creamy sauce to make the ultimate comfort food. You can use light cooking cream and replace half the pasta with spiralised zucchini for fewer calories, if you prefer.

    Serves: 4 

    • 375g spaghetti
    • 20g butter
    • 1 small brown onion, finely chopped
    • 2 cloves garlic, crushed
    • 3 rashers bacon, finely chopped
    • 1 zucchini, diced
    • 300ml thickened cream
    • 1 chicken stock cube, crumbled
    • 3/4 cup frozen peas
    • 1/2 cup finely grated Parmesan cheese
    • freshly ground black pepper

    1. Cook the pasta in a large saucepan of boiling water until tender. Drain, reserving 1/3 cup of the cooking liquid.
    2. Meanwhile, heat butter in a large frying pan over medium-high heat. Cook onion, garlic and bacon, stirring, for 5 minutes or until bacon is crisp. Add zucchini and cook for 2 minutes.
    3. Add cream and stock cube and bring to the boil. Reduce heat and simmer for 3 minutes. Add peas. Simmer for 3-4 minutes or until sauce is thickened. Stir in Parmesan cheese.
    4. Add drained pasta and reserved cooking liquid to sauce and toss over heat for 2 minutes. Serve pasta with freshly ground black pepper.
