Tuna, Bean and Kale Salad

    Massage the kale before tossing it into this easy salad of mushrooms, black beans and tuna for extra tender, green leaves!

    Serves: 1 

    • 250g kale, stems removed, chopped
    • 1/2 avocado, diced
    • 1 Roma tomato, diced
    • salt and ground black pepper to taste
    • 1/2 cup canned black beans, drained
    • 1/2 cup chopped swiss brown mushrooms
    • 1 (95g) can tuna, drained
    • 1 1/2 teaspoons Italian-style salad dressing, or to taste

    1. Put kale in a bowl and massage until leaves soften.
    2. Place avocado and tomato in a separate bowl and season with salt.
    3. Combine black beans, mushrooms and tuna with the kale. Add avocado and tomato. Add Italian dressing. Finish with black pepper.
