Egg-free Chocolate Cake

    Serves: 12 

    • 3 cups plain flour
    • 1 cup caster sugar
    • 1 cup brown sugar
    • 3/4 cup cocoa powder
    • 2 teaspoons bicarb soda
    • 1 teaspoon salt
    • 1 cup milk
    • 1 cup water
    • 3/4 cup vegetable oil
    • 1/4 cup sour cream
    • 2 teaspoons vanilla extract

    1. Preheat oven to 180 degrees C.
    2. Sift flour, white sugar, brown sugar, cocoa powder, bicarb and salt together in a large bowl. Add milk, water, oil, sour cream and vanilla extract; mix together until well combined. Pour into an ungreased 22cm x 32cm rectangular cake pan.
    3. Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 35 minutes.
