Funnel Cakes

    We recently traveled to the Carolinas in the USA - we’d never heard of Funnel Cakes, but quite a few places had them, so we thought we’d try and replicate them when we came home. I found several different recipes, and made my own. Great for a breakfast treat, or an after school snack.

    • 2 large eggs
    • 1 cup milk
    • 1 cup water
    • 1 teaspoon vanilla extract
    • 3 cups plain flour
    • 1/4 cup white sugar
    • 3 teaspoons baking powder
    • 1/4 teaspoon salt
    • Oil for deep frying
    • Icing sugar for serving


    1. Heat oil to 190 degrees either in a deep fryer, or a heavy based frying pan.
    2. In a large bowl, beat the eggs. Add milk, water and vanilla.
    3. Add flour, sugar, baking powder and salt. Whisk until smooth.
    4. Cover the bottom of a funnel with your finger, and ladle half a cup of mixture into the funnel. Hold the funnel about 10cm above oil and release your finger, moving the funnel in a spiral motion until all the batter has flowed out of the funnel.
    5. Fry for approximately 2 minutes each side or until golden brown.
    6. Drain on paper towel. Dust with icing sugar to serve.


    You can use a sauce bottle instead of a funnel. Can also serve with ice cream and berries; banana, ice cream and Nutella.
