Bolognese Pastries

    These delicious Bolognese pastries are the perfect way to use leftover Bolognese sauce, encasing it in crisp and flaky pastry, to create a quick and easy dinner or snack.

    Makes: 8 pastries

    • 2 sheets ready rolled frozen puff pastry, just thawed
    • 1 1/4 cups beef bolognese sauce (see note)
    • 1/2 cup grated Parmesan cheese
    • 1 egg, lightly beaten

    1. Preheat oven to 200 degrees C. Line two baking trays with baking paper.
    2. Cut each pastry sheet into 4 equal squares. Divide Bolognese between pastry squares, spooning into a small pile in the centre of each piece of pastry. Sprinkle each with a little Parmesan cheese.
    3. Working with one pastry square at a time, lift two opposite corners of pastry up to meet in the centre. Press edges to seal filling and make a triangle shape. Place on prepared tray. Repeat with remaining pastry, Bolognese sauce and cheese.
    4. Brush pastry parcels lightly with beaten egg. Bake for 15-20 minutes or until puffed and golden. Serve.


    Use leftover homemade Bolognese sauce or buy pre-made Bolognese from the supermarket.
