Almond Anzacs

    I have put a twist on the traditional Anzac biscuit by adding flaked almonds. These sweet, chewy biscuits now have a lovely nutty flavour making them a family favourite.

    Makes: 24 biscuits

    • 1 cup (90g) rolled oats
    • 1 cup (150g) plain flour
    • 1/2 cup (110g) caster sugar
    • 1/2 cup (110g) firmly packed brown sugar
    • 1/3 cup (25g) desiccated coconut
    • 1/2 cup (40g) flaked almonds
    • 125g butter, chopped
    • 2 tablespoons golden syrup
    • 2 tablespoons water
    • 1/2 teaspoon bicarb soda

    1. Preheat oven to 160 degrees C. Line three oven trays with baking paper.
    2. Combine oats, flour, sugars, coconut and almonds in a large bowl.
    3. Combine butter, golden syrup and water in a small saucepan, stir over low heat until smooth. Stir in bicarb. Mix butter mixture into dry ingredients until combined.
    4. Roll level tablespoons of mixture into balls. Place about 5cm apart on prepared trays; flatten slightly. Bake about 15 minutes or until golden. Cool on trays.
