Chilli Beef Nachos

    I use this nacho recipe all the time, whether it be for entertaining the kids friends, family movie night or as a cheaper alternative to ordering takeaway. Adjust the chilli according to your taste and serve with a side of guacamole to jazz it up a bit if you like.

    • 1 tablespoon vegetable oil
    • 500g beef mince
    • 2 tablespoons taco spice mix
    • 1 teaspoon dried red chilli flakes
    • 1 (400g) can red kidney beans, rinsed, drained
    • 1/3 cup frozen corn kernels
    • 1/3 cup water
    • 1/2 cup bottled tomato salsa
    • 250g corn chips
    • 1 cup grated Cheddar cheese
    • 1/3 cup sour cream
    • 1/2 cup fresh coriander leaves

    1. Preheat oven to 200 degrees C. Line a large baking tray with baking paper.
    2. Heat the oil in a large frying pan over high heat. Cook the mince, breaking up any lumps with a wooden spoon, for 5 mins or until browned. Add the spice mix and chilli flakes and cook for 1 minute. Add the beans, corn, water and half the salsa. Reduce heat to medium-low and cook, stirring occasionally, for 3-5 minutes or until mixture is thick.
    3. Meanwhile, place the corn chips, in a single layer, on prepared tray. Sprinkle chips with half the cheese. Bake for 5 minutes or until golden.
    4. Top corn chips with the beef mixture and the remaining cheese. Bake for 5 minutes or until cheese has melted. Slide the nachos onto a large serving platter. Dollop with sour cream and the remaining salsa. Serve sprinkled with coriander leaves.
