Pear and Oat Cookies

    These healthy pear and oat cookies are the perfect way to get some hidden fruit into the kiddies! The pear can be replaced with banana or cooked apple if you prefer. Store cookies in an airtight container for up to 4 days.

    Ingredients
    Makes: 24 cookies

    • 2 large ripe pears, peeled, cored, chopped
    • 60g butter, melted
    • 1/4 cup (60ml) golden syrup
    • 1 1/2 cup (130g) rolled oats
    • 1/2 cup (50g) almond meal
    • 1/3 cup (50g) self-raising flour
    • 1/2 teaspoon ground mixed spice

    1. Preheat the oven to 180 degrees C. Line two baking trays with baking paper.
    2. Place the pear, butter and syrup in a food processor and process until smooth. Combine the dry ingredients in a large bowl and make a well in the centre.
    3. Add the pear mixture to the dry ingredients and stir to combine. Roll level tablespoons of mixture into balls and place onto the prepared trays, about 5cm apart. Press each ball out to a 5cm round.
    4. Bake for 12-15 minutes or until light golden. Cool biscuits on a tray for 5 minutes before transferring to a wire rack to cool.
