Spiced Vegetable Soup

    A real wholesome winter warmer using herbs, spices and mixed vegetables. This soup is easy to make and low in cost.

    Serves: 4 

    • 1 tablespoons olive oil
    • 25g butter, chopped
    • 1 large brown onion, chopped
    • 1/2 teaspoon garlic granules
    • 1/2 teaspoon celery salt
    • 1/4 teaspoon ground black pepper
    • 1/2 teaspoon ground turmeric
    • 4 cardamon pods, seeds only, finely crushed
    • 1/4 teaspoon ground fenugreek seeds (optional)
    • 1/2 teaspoon dried mixed herbs
    • 1 teaspoon sugar
    • 1 teaspoon soy sauce
    • 1/8 teaspoon hot chilli powder
    • 2 cups chicken or vegetable stock
    • 2 cups passata or tinned tomatoes, blended
    • 300g frozen mixed veg
    • 1 medium potato, chopped into 1cm cubes
    • 1/4 cup creme fraiche or cream (optional)

    1. Heat oil and butter in a large saucepan over medium heat. Add the onions and all the spices and herbs and cook on low heat for about 10 minutes, stirring, do not burn the onions.
    2. Add the stock and passata, bring to the boil then add the frozen veg and potato. Bring back to the boil. Boil for 10 minutes, then reduce heat and simmer until veg are soft, about 1 hour. Add creme fraiche or cream to taste and serve.


    You can put the soup into 4 or 5 small plastic containers and freeze until using.
