Vegan Avocado Fudge

    A simple and healthy, vegan recipe that uses just three ingredients; bananas, avocados and dark chocolate to create a natural sweetness and smooth texture in this fudge.

    Ingredients
    Serves: 8 

    • 250g good quality vegan dark chocolate
    • 2 avocados, chopped
    • 2 bananas, chopped

    1. Melt the chocolate slowly in a microwave on medium-high (80%). Do this in short bursts, stirring every 30 seconds.
    2. Blend the avocado and banana in a food processor until smooth.
    3. Add the melted chocolate and blend until smooth.
    4. Line a baking tray with greaseproof paper and pour the mixture into it.
    5. Leave in the fridge until firm, around 2-3 hours. Alternatively, you can leave the mixture in the freezer for a shorter time.
    6. Cut into squares and store in the fridge until serving to ensure the fudge doesn’t melt.
