Cottage Cheese Pancakes with Maple Syrup

    These light pancakes are made with cottage cheese in the pancake batter and served drizzled with maple syrup.

    Serves: 4 

    • 225g cottage cheese
    • 40g plain flour
    • 2 tablespoons vegetable oil
    • 3 eggs, lightly beaten
    • cooking spray for frying
    • maple syrup to taste

    Preparation:5min  ›  Cook:15min  ›  Ready in:20min 

    1. Combine cottage cheese, flour, oil and eggs in a large bowl.
    2. Heat a large frying pan over medium heat, and coat with cooking spray. Pour 1/3 cups of batter into the pan. Cook for 2-3 minutes or until bubbles appear on the surface. Flip with a spatula and cook for 1-2 minutes or until browned on the other side.
    3. Transfer pancakes to a plate and cover to keep warm. Repeat with remaining pancake batter. Serve pancakes drizzled with maple syrup.

    I love these. They are low carb, the texture is moist and chewy. I add a little fruit preserves to serve them. I also make and freeze them. I pop a couple in the toaster oven and have a nice breakfast any day of the week.  -  17 Oct 2018  (Review from Allrecipes USA and Canada)
