Apple Fritters with Maple Syrup

    If you love banana fritters, you are going to love these apple fritters. With their crispy outside and soft, sweet apple centre, they have all the flavours of a apple pie but in a fritter! The apple slices can be replaced with sliced pear or pineapple.

    Serves: 4 

    • 2/3 cup (100g) self-raising flour
    • 1/2 cup (75g) plain flour
    • 1/4 cup (55g) caster sugar
    • 1/2 teaspoon ground cinnamon
    • 1 egg
    • 3/4 cup milk
    • 1/4 cup (60ml) maple syrup
    • 2 large green apples
    • vegetable oil, for deep-frying
    • vanilla ice-cream, to serve

    1. Combine the flours, sugar and cinnamon in a medium bowl; make a well in the centre. Gradually whisk in the combined egg, milk and 1 tablespoon of the maple syrup until batter is smooth.
    2. Peel apples and remove the core with an apple corer. Cut apples into 1cm-thick rings. Heat the oil in a wok or large, deep saucepan. Dip apple slices in the batter; drain away excess. Deep-fry apple slices, in batches, until crisp and golden. Drain on absorbent paper.
    3. Serve fritters with ice-cream and drizzled with the remaining maple syrup.
