Fresh Fig, Apple and Ginger Jam

    Combine the flavours of fresh figs, apple and ginger in a jam and use to spread on fresh crusty sourdough bread and you have a match made in heaven! This jam is also great served on wholegrain crackers with brie cheese.

    Ingredients
    Makes: 8 cups

    • 2 green apples, peeled, cored and finely chopped
    • 1 1/2 cups water
    • 1.2kg fresh figs, chopped
    • 1/2 cup fresh orange juice
    • 5 1/2 cups white sugar, approximately
    • 2 teaspoons ground ginger

    1. Combine apple and water in a large saucepan; bring to the boil. Reduce heat and simmer, covered, for about 20 minutes or until apples are soft. Add figs and juice; simmer, covered, for 10 minutes.
    2. Measure fruit mixture; allow ¾ cup sugar for each cup of mixture. Return mixture and sugar to the pan with remaining ingredients. Stir over heat, without boiling, until sugar dissolves. Boil, uncovered, for about 45 minutes or until jam sets when tested on a cold saucer (see note).
    3. Pour into hot sterilised jars and seal immediately.

    Note:

    To test if the jam is ready, place a teaspoon of the jam on a saucer that has been chilled in the freezer. If the jam gels on the plate, its ready. If it is still runny, cook a little longer then retest.
