    • 2 tablespoons vegetable oil
    • 1 small brown onion, chopped
    • 1 clove garlic, crushed
    • 500g firm tofu, crumbled
    • 1 cup sliced fresh mushrooms
    • 1 tablespoon soy sauce
    • 1 tablespoon chopped fresh flat-leaf parsley

    1. Heat oil in a large frying pan over medium heat and cook onion until soft and translucent, about 3 minutes. Add garlic and cook until fragrant, about 30 seconds.
    2. Add tofu and mushrooms and cook until tofu starts to brown, 8 to 10 minutes. Sir in soy sauce and parsley.
