White Bean and Garlic Dip

    This creamy white bean and garlic dip is perfect to serve with vegetable sticks or toasted pita crisps. Store dip in the refrigerator for up to 3 days.

    Makes: 2 cups

    • 1/4 cup olive oil
    • 3 cloves garlic, crushed
    • 2 (400g) tins cannellini beans, rinsed, drained
    • 2 tablespoons lemon juice
    • salt and freshly ground black pepper
    • pinch smoked paprika

    1. Heat 2 teaspoons oil in a small frying pan over medium heat; add garlic and cook, stirring, for 1 minute or until fragrant.
    2. Place the beans, lemon juice, 2 tablespoons oil and sauteed garlic in a food processor. Process until almost smooth, adding a little water if necessary. Season with salt and pepper.
    3. Place the dip in a serving bowl. Drizzle remaining oil on top and sprinkle with paprika to serve.
